Burger Salad?

“Burger Salad”, I figured this was a more appropriate title for the dinner dish my family calls “sh*t in a pot.” 

One of the many things I remember growing up, is my mom always having dinner ready right when we got home. The only nights she didn’t cook were Friday’s & that usually meant pizza, take-out or going out!

This is one of the meals she would make every so often & we all loved it! The name however, my dad infamously labeled it as, “sh*t in a pot.” Why? Maybe…because it really is just random ingredients thrown together. Regardless of the name, we all loved it & still do!

I’ll never forget…when Paul & I first moved in together, I knew how to cook but not very many dishes. One of the meals that I easily knew how to throw together was this. I remember like it was yesterday, I started mixing all of the “ingredients” together & he said, “Um… what is that?” I replied, “Shit in a pot.” & of course, his response was, “Obviously!…. I’m not eating that.” ~ 5 years later & it’s one of our main dishes we make at least every other week. He loves that its healthy & quick. (:

Y’all, it’s so easy to make, & most of you probably already have the ingredients! But even more so, it’s definitely for those nights that you & your significant other are doing the whole, “What do you want for dinner? Idk? …Not that.” mess.

This recipe is for four-6 people, we have our portion & then Paul will have the left overs as taco’s or as is for lunch.

What you’ll need:

  • Large Non-Stick Fry Pan
  • Microwaveable Potato Bag
  • Slotted Spoon
  • Spatula
  • Ground Meat Chopper
  • Knife
  • Cutting Board
  • Colander
  • Measuring Cup
  • Paper Towels


  • 2lbs 96% Lean Ground Meat (defrosted)
  • 1 Green or Red Bell Pepper (cubed)
  • 10 Cherry Tomatoes (halved)
  • 2 Jalapenos (sliced)
  • 1/4 Cup Edamame (frozen bag)
  • 1 Small Sweet Potato (cubed)
  • 2 Whole Eggs
  • 2 Whole Egg Whites
  • Salt & Pepper

~ for additional ingredients you can substitute:

  • Sweet Potato for 1 Cup Brown Rice (frozen bag)
  • Edamame for 2 Cups Broccoli (frozen bag)


How to Cook:

Step 1:

  • Place fry pan on stove, low-medium heat (if you have the non-stick pan, you will not need oil or spray)
  • Place DEFROSTED ground meat into pan, stir occasionally with Meat Chopper/Spatula
    • If your meat has a lot or even a little grease/fat:
      • place three-four paper towels in colander, place in the sink
      • once meat is almost finished cooking, strain the meat to remove grease/fat
      • place back on the stove

Step 2:

  • While meat cooks, chop vegetables on cutting board & leave to the side:
    • Bell Pepper
    • Tomatoes
    • Jalapenos

Step 3:

  • Mix eggs into measuring cup & leave to the side

Step 4:

  • Place sweet potato in microwavable pouch, cook for 4-5 minutes (or until soft)
    • once cooled down, remove skin & cube
      • if you are using frozen bagged veggies, cook those & leave to side

Step 5:

  • Make sure meat is almost cooked thoroughly (after straining & placing back into the pan):
    • make a hole in the middle of the meat:
      • pour Eggs only, stir occasionally

Step 6:

  • Once Eggs are cooked fully, mix in & cook for 5 minutes on medium heat:
    • chopped veggies
    • sweet potato
      • or alternate
    • edamame
      • or alternate

Step 7:

  • Remove from heat
  • Add salt & pepper to taste

Step 8:

  • ENJOY!!! This meal usually takes about 10-15 minutes to cook, including prep time.

PS: Paul will usually add, Sriracha sauce, Ranch or Ketchup to his for extra flavor. 😉
